  • 2 ½ cups (315g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (230g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • ½ cup (120ml) whole milk
  • ½ cup (120ml) strawberry puree (fresh or frozen strawberries blended)
  • A few drops of red food coloring (optional)
For the Strawberry Frosting:
  • 1 cup (230g) unsalted butter, softened
  • 4 cups (480g) powdered sugar
  • ½ cup (120ml) strawberry puree
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

1. Prepare the Cake Batter:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In another large bowl, beat the butter and sugar until light and fluffy (about 3-4 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Alternately add the flour mixture and milk, beginning and ending with the flour. Mix until just combined.
  6. Gently fold in the strawberry puree. If you want a deeper pink color, add a few drops of red food coloring.

2. Bake the Cake:

  1. Divide the batter evenly between the prepared cake pans.
  2. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
